Depends what you want out of it. I hear co-op is easier to set up on the Xbox. I had no luck getting matched up with my friend on the PS3 version and we tried multiple times.

The game isn't meant to pair you up with friends. That would be like hitting quick match and HOPING you get paired up with a friend on any other game.
I have played the 360 version to completion and it is perfectly playable, but as most above have said, the PS3 version has a more consistent frame rate.
I got it on PS3 and had a great time with it. The only factor for me was that I don't always have a subscription to Xbox Live Gold but with PSN being free I can always take advantage of Dark Souls' cool online features.
PS3 version for the controller and online features just make this game feel like a PS3 game. Although the framerate is better than the xbox360 version there is still slowdown in the PS3 version. Specifically, in Blighttown the game gets really choppy at times.
