Does anyone else get the feeling that with Inafune no longer at Capcom that the directors for the Dead Rising franchise might be attempting to retcon Chuck Greene out of the story? At the moment, its too early to tell, but what if this game is actually canonical? How crazy would that be?! Also what would that mean for Chuck and Katie Greene?

They're not retconning him.  This is essentially just a way for Capcom to sell us the same game with a different lead character.  If you look at the trailer, it fully states that this is just a "what if" scenario.

Dead Rising canon? Is that a thing people care about?

Chuck Greene is in the game, you play as Chuck in the co-op mode. He is probably involved in the story as you see his backpack and Katie's gaming system in the preview in a pool of blood.

While Off the Record will be FAN-TASTIC, I don't think it's canon. 

I think they are milking that game for all it's worth (while it will be updated) and then maybe they might consider starting working on a DR3. I feel like the sales figures of those different DR2 games, paired with the XBLA games surrounding them, might influence them as to which protagonist should be the main character in the following game.

Like I said before, Capcom is going full steam ahead with the whole repackaging games approach. This thing better be cheap but either way I still think it's a cheap fan service cash in.

This is essentially a "Remix" mode with new cutscenes and a few new assets. It's like a slightly more involved "Master Quest".

I was awaiting for a sort of Game of the Year/Special edition packaging the prologue and epilogue DLCs...and then this!! °__°

I guess in a way, even as a what if.., it is kicking Chuck out of the franchise if not retconning him.
And this one will be directly developed by Capcom (Capcom Game Studios Vancouver) unlike Blue Castle's DR2.
I'm guessing we won't see a new original character leading DR3... just wait and see!

There isn't a 'Dead Rising Canon.' There are so many alternate endings and everything, they've proved that they will pick and choose whatever canon they need at any time to tell the story they want.
