Okay, okay. I had this exact same realization playing through Case Zero. It's a game, not much else to say. I'm not sure I'd really be happy with any official explanation from the game anyway.

Heres the thing. I bet that most games story depends on the fact that none of the bullets or sword cuts get the characters and they are getting through unscathed so when it does happen it isn't cannon. Which is why when you die no one mentions that you came back from the dead.
Well in most games you go through and get shot and stabed and all sorts of other messed up things
But you don't die from them,like in GTA 4 you can get shot with a shotgun and then go eat a hotdog and your perfectly fine again,it's just the way games are,there meant to be fun not insanely hard.
Anyway it's seems a little weird that this game would go for realism,I mean you can make a homemade lightsaber out of gems and a flashlight.

Dude.
Well in addition to the perfectly reasonable "game logic" excuse, it's also established that different people change at different rates. A certain character gets bitten and takes a few days to change. it's not unreasonable that some people could take 3+ days. You could even use the game logic that a few chomps on Chuck or a survivor don't count for much, that those that turn have been chewed on much more thoroughly. When all of Chuck's HP is depleted, that's when he's been eaten enough to turn. Kind of like how the human bosses take countless gunshots to the head before dying, and how characters in an RPG can be scared of having a gun pointed at them in cutscenes but will get shot endlessly in battles.
