     So... I've locked the chef in that room and called the head waiter to collect the fake dish. As soon as I spring that guy from the freezer the waiter just runs towards me and brutalizes me with his cane. I've tried waiting for the waiter to exit the area before attempting the rescue, but the moment I step into the VIP area everyone just goes apeshit. Talking to Mortimer makes him glitch out and he turns immediately hostile; I can't complete the quest. 
     
    Anyone else experienced this and figured out a workaround?
