    Bahamut for me. The first one you get was cool too though.

    i loved valefor, but as the game progressed the more useless he became.

    Bahamut helped me out a lot throughout most of the game. He is my favorite by far.

    I loved Anima quite a bit, so different from the usual summon.

    I have only played two Final Fantasy games, X and VIII.  In both games, the early summons were effectively worthless by the last quarter of the game.  A shame, really. 

    Wasn't one of the Aeons Thor's horse?  I thought that was pretty awesome.
