my example would be wizard101 as it has tons of main bosses, optional bosses and even roaming bosses all over the place. I would just play it if the game wasn't so shit. what games have such a huge amount of bosses like it?

The Castlevania games, especially symphony of the night and the ones on handheld, Aria of Sorrow, Dawn of Sorrow, etc. I also remember the Metroid Prime games having lots of bosses, but I might be misremembering there. Final Fantasy XII if you count the hunts, though those can either be really easy or really difficult depending on what level you choose to tackle them at.

One of the last and best Sega Genesis games was a game from Treasure called Alien Soldier. The game is basically one huge boss rush with some of the best graphics, sound, and presentation the Genesis was capable of during its last days in the mid 90s. Even though there are small groups of developers still making games for the Genesis till this day which is amazing.

I wonder what the game with the *most* bosses at this point would be? Could anything compete with something like WoW or Everquest? I mean, WoW must have around 60 bosses per expansion if we're only counting dungeon and raid bosses.
