I would like a Street Fighter II Turbo machine.
Street Fighter II or Defender, because I'm old enough to remember playing those a bunch in arcades before comparable versions were easily available to me on consoles. I actually looked up both of these this week after listening to the Bombcast, and every working one I saw was way too expensive to even consider.
I'd want a Arcade Cocktail Cabinet. That sort of thing is small and fun...play me some Lady Bug.
However, I would want a REAL 'cocktail size' with glass on top that you can sit at - put drinks on it. And, even if modern, it needs a screen that has a super-wide view angle that is bright, colorful and sharp when sitting down.
@monkeyking1969: Not sure if it's the same where you live, but around my area there are a few business (2 or 3) that make nice MAME arcade cabinet kits that you can have made or construct yourself, including cocktail and stand-up machines. I wanted to get one for a long time but now that I have my little Raspberry Pi 3 with Recalbox and a full MAME set that I can play with a Hori arcade controller, I am extremely satisfied (and actually a bit relieved to not need a big arcade machine footprint to get pretty much the same enjoyment from these 1000's of arcade titles).
If I were to get a full-sized machine, though - I would still choose a cocktail MAME cabinet so I can sit and play all the games of my youth. If I HAD to choose just one game... maybe Turtles in Time? Or maybe a 6-player X-Men cabinet. edit: Oh, oh! Violent Storm is awesome. That's the ticket.
