So what's with that download option at the bottom of the videos?

At the bottom of the videos on this site it gives me the option to 'download' it. However when I click the download button I'm simply redirected to another window where I can continue to watch video.

Is it possible to download giantbomb videos onto my computer?

you might have to right click and select save or save as.

Right click it. Save file as...

Just right click and save link as.
