I think Plants Vs Zombies is pretty colorful and pleasing to the eye. I don't know if it is the most colorful game out their, but it has to be pretty close.

Gears of War

I personally thought that Prince of Persia (2008) was incredibly beautiful once you purged the world from the darkness. Apart from that, even though I never played it, judging from the video I've seen of it, Okami seemed really colorful.

Hero's Quest. The most colorful game ever made. I joke of course but it was beautiful in it's day.
