Crusader Kings 3. It won't happen any time soon, since they've been improving the game with really substantial pieces of DLC since release, but there's only so much they can do before they need to rebuild the game from the ground up, and there probably isn't a better way to do that than just making CK3. The first few DLCs were iterative (Sword of Islam) and they've gotten progressively larger and more ambitious since The Republic up to Rajas of India, with core mechanics being completely re-tooled (an example of this is when they re-built the technology mechanic in The Old Gods). They can do EUIV expansions until then, as that game still could use a few improvements.
Another example of a game that has been regularly improved with significant DLC but could maybe use a fresh start, Civilization 5 is showing some age and some of its issues might not be fixed within the constraints of the current engine/core systems. They decided that making the end-game more interesting was their top priority for Brave New World, but I don't think they really accomplished that goal, as it's still a bit of a drag. XCOM was amazing, and I'll play the shit out of Civ: Beyond Earth, but I'd have rather had a Civ 6 - maybe it's just because I'm a history/fantasy nerd instead of a science/sci-fi nerd.
And as much as I'm looking forward to Fallout 4, what I really want from Bethesda is a new Elder Scrolls game. The last two TES games haven't been too outlandish in terms of setting, especially not when compared to Morrowind, so a new TES game in Summerset Isle/Alinor, Valenwood, or even Elsweyr or Black Marsh would be a great change of tone for the franchise and hark back to what so many people loved about Morrowind. Sadly, I think it's more likely that we'll get a game set in Hammerfell, or they'll re-use one of the previous settings. Oh god, I just had a hellish vision - The Elder Scrolls VI: Skyrim 2. That would be the worst.
