Payday 2 each mission and playing with different teammates always proves either an easy smooth heist or a rough mission. I feel like each game I play is never the same game twice.
What games can you never get bored of?
Skyrim and Mount and blade: warband.
I have this dirty habit in the mount and blade warband campaign, where i'll play a character for like a dozen hours and then just delete him and start over for no real reason. I've never gotten all that far in it, i've helped a few factions conquer some cities and thats about it. I just start over once things start rolling for whatever reason. "oh i should be more of a mounted character" "Nah, screw that i have mounted combat i'll be an infantry man with a bow". "Oh ill be nords" or "oh i shoulda gone vaegirs their starting area is better suited to farming bandits" ect. It's horrible.
Left 4 Dead 2 and Fire Emblem 7 are two games I can and do go back to ad infinitum while never getting sick of.
Any Skate game. Give it to me and I can spend an entire month playing it non-stop from the morning until the night. I'm so pissed off right now that I don't have my Xbox 360 with me...
M&B Warband, like quite a few people already said. And SWAT 4. Every once in a while I'm stupid enough to uninstall it only to notice two weeks later that I really wanna play some more SWAT.
I suppose there's plenty of games that I've never grown bored with, but these days there's pretty much always a new option for you to try-out when you've finished one game, so there's no "need" for you to keep playing the same game. It sure would save me a lot of money to keep playing the same game over and over, but no can do...
The first two Jak & Daxter games. Probably mostly because I obsessively played them as a child, but I just have the perfect muscle memory for them now and it makes me feel wonderful whenever I replay them. I think Jak 3 can get a little tedious because of the less consistent pacing, and I don't have as much fondness for Jak X (it's still pretty good) or The Lost Frontier (fuck you).
Funny story about the first game: It was my first PS2 game, and I got it before I even knew I needed a Memory Card. So for about half a month this was the routine;
- Get home from school.
- Get about two-thirds of the way through the game
- Go to bed, leaving console on
- Mom turns off the console overnight, because of the constant whirring noise
- Rinse, repeat
Civ 5, XCOM, Diablo III, and I can pop in the latest game in the NHL series pretty much any time and have fun with it.
I've been playing Space Harrier II at least a couple times a year for 26 years now, starting back in the late eighties when I got it along with a Genesis. I've beaten it with the extra life count so high it wrapped off the screen and disappeared - which is quite a bit easier than it sounds actually - II is nowhere near as difficult as I. The music is some of the Genesis' best crazy synthy shit ever.
Just Cause 2 and Phantom Brave are the two specific examples that come to mind.
Playing Just Cause 2 for a third time, while Phantom Brave has been played five times to completion with some of the extra maps as well.
As far as genres are concerned, I would say JRPGs, Third Person Shooters (mostly open world) and Fighting games.
ArmA. There are always new addons to add new elements to the game, new mechanics and assets. Missions are always unique, even when it's the exact same mission. And it's so easy to just populate a massive map, create a mission out of thin air, and carry that mission out. And there is so much to do. Artillery, armor, air support, logistics, comms, etc.
Starcraft 2. I've been playing for like 3 years now and have like a bajillion hours playing and even more time spent watching pro matches. It doesn't feel like I'll ever tire of it.
I don't think there is such a game for me, but the one that comes closest is Skyrim. And really, just Skryim, not ES or Fallout games before it.

I have made my way through the Mass Effect series with 5 characters doing the complete saga and have been itching to do another. Animal Crossing is another game I can always go back to for a couple hour or so every week and enjoy myself.
I'll stick to PC, even there are a bunch of SNES, NES, and PS2 games I could go back to again and again as well. So for PC it's Binding of Isaac, CoD4, CS (used to play mostly 1.6, but I'm not so xXHARDCOREXx about it now, so I just play GO), Dark Souls, Skyrim, Jamestown, Mount & Blade, Quake III, Rainbow Six 3, and Super Meat Boy . I'll also play through The Ultimate DOOM on a whim at least once a month. I don't know if that is too large a list, but those are the games which never get uninstalled. Any time I want to just relax and play for a while without starting anything new, or sinking into a game I'm currently working through, I'm probably going to be playing one of those.
I have a few games that I love to replay every now then but I wouldn't say I'd never get bored of them eventually. I haven't yet though!

- The Witcher 2 (3 will likely replace this on the list)
- Gothic 2
- Final Fantasy 9
- Final Fantasy 12 (Never got the hate for this game. It's one of my favourites right behind 9)
I could probably list more but I'll leave it at that for now. I don't want the list to be too big.
