I've always pronounced it [gib], based on the way I pronounce "giblets," which I assume the word comes from, but I see that that word is also pronounced differently in different areas.
I pronounce it incorrectly. They say you should respect people who mispronounce words because they learned them by reading? Well you should respect people who mispronounce words because they, at age eight, knew enough to not eat entrails.
As it happens, the soft G conveys fleshy chunks better than the hard G any day.

@stonyman65: Jib is also how I would pronounce it. Whether that is correct or not I do not know.
I pronounce it with a hard g.
Yes, you can make lots of arguments for why you shouldn't do this but my reason is pretty simple: we already have the word 'jib' and a standard pronunciation for that (on a boat or a camera/film set) so why not make this new word we've got something you can instantly understand I'm using by how I pronounce it.
