wow, it's like this topic was made for me. this girl I worked with acted EXACTLY like that. she had a boyfriend but always acted flirty and touchy-feely towards me. as an example, I commented on her curling her hair once, the response I got was :"I LOVE that you notice things like that about me", as opposed to a more casual "gee, thanks".....other days she'd ignore me and not even say hi when she came into work. I felt like I never knew which version of her I was going to see when I came into work.

I got so bothered and confused by it that I ended up drinking at work and got fired.

When I went to pick up my last cheque she happened to be there, I walked right by her, didn't even acknowledge her. Hope she liked being treated like that as much as I did.

OK, we're off to a bad start already because you've set us up with a question that is impossible to speak about intelligently.
 
Originally I was going to post "they don't" but seriously, I think that at least one other person would have posted that already. SO obvious

In general, most guys try and think very logically  and view showing emotion or being effected by emotion as a weakness. Therefore, when a woman is in touch with her emotions, we think she's irrational.
 
It boils down to this: logic is about making decisions based on observations and math whereas emotional thinking is about making decisions based on gut feelings and intuition. Why is one worse than the other? They really aren't worse, but since one way is different from our own way, we naturally feel it must be inferior.
 
The truth is, guys are effected by emotion too, but most of us don't like to admit it or flat out deny it. And girls can be very logical as well, but because they're incorporating their feelings and other intangible things into their decisions, it can seem irrational because it can't be drawn out on a chalk board. When you understand what actually went into a girl's decision to do something you previously may have thought was very irrational, you realize it's completely rational, there was just a lot of factors you weren't aware of.
 
As for the OP's question about girls seeming like they like you one day and not the next, in my experience, a girl will make up her mind about someone very quickly. First of all, unlike a lot of guys, single girls aren't constantly assessing every guy they meet as a possible boyfriend. Half the time they meet a guy, and they just see a guy. However, a lot of times they will "put out feelers" and sort of test the waters by being slightly flirty, etc to gauge the reaction. A lot of guys don't pick up on this and ignore them, so the girl gets the idea that the guy is not interested, and all of a sudden the guy is in the friendzone and he's complaining he never got a shot.
 
This is why girls have the stereotypical idea that guys are dumb, because guys aren't as good as girls at picking up subtle things like that. So a girl may be putting out all kinds of subtle hints and clues as to what they're thinking or feeling but because they're not just beating us over the head with it, we say they're dumb for being "irrational". It's just two very different ways of communicating and thinking. Not better or worse. Like Yin and Yang.
