For me that would most likely be a Baldur's Gate: Dark Alliance 2 that needs to be made, the co-op in the original for the xbox was fantastic and chopping rats in half was fun in that first level. Also:

I'm playing it right now for the first time, it's one of the best JRPG's around, but it's extremely dated. With today's technology, I can see a SOA-styled game getting perfect scores all around.
You know there was a Dark Alliance 2, right? Are you saying you'd like to see a third one?? I've probably just misread your post lol. Anyways I would also like to see a Freedom Fighters sequel.
Dark Alliance is an excellent choice, but I'd like to see a 3rd one, because there was a sequel (even though it wasn't quite as good as the first one.)

That's what I was thinking. Eternal Darkness was easily the best thing about having a Gamecube for me. I wouldn't even mind if it was a spiritual sequel rather then an actual one.
No One Lives Forever. One of my favorite games of all time. So maybe a follow up now would be "bad" in a sense because no matter what, it would be hard to live up to what the first one did. That being said, if Monolith was doing it, I would at least be happy it was coming!

I'd like to see a new version of Evil Genius - that game had such a killer idea and pretty decent execution, they just need to tweak it and pretty it up a bit.
Psi-Ops, that game could be amazing with a sequel, i loved the original even though i ran into a game breaking glitch that made it impossible to beat the game.
Arx Fatalis. Arkane needs to stop helping make art assets for crappy MP shooters and actually make a new game. The Crossing sounded cool but I want Arx Fatalis 2.

A SoA remake would make be awesome. The storyline was so good.
There are many, but if I could only pick one, the choice is easy: God Hand. It's arguably the best action game ever made despite being extremely low-budget -- the very thought of what a sequel with a budget as large as Vanquish's would be like makes my mouth water.
