Too many to choose from, because they all scratch slightly different itches:
The Thing Nightmare on Elm Street Zombie Flesh Eaters (goddamn, I love that film) Evil Dead series Day of the Dead (the original) also doesn't get the recognition it deserves

I almost put the thing but frankly I couldn't quite get past it being a Sci-Fi Thriller instead.
@EuanDewar: I think an argument can be made on both sides of the fence. In truth, I'd probably agree that it's a sci-fi thriller with horror (and RPG) elements.
Dead Alive for it's over the top humour and splatterific effects! Day of the Dead for being "The Darkest Day of Horror the World Has Ever Known!" A Nightmare on Elm Street & A Nightmare on Elm Street 3: The Dream Warriors for featuring Freddy at his deliciously evil best! Re-animator & From Beyond because they are the best Stuart Gordon & Brian Yuzna collabs. Evil Dead for being Evil Dead.
" No one mentioned the Exorcist yet??? For SHAAAAAAME! :P "
Mine is Halloween. I love the Exorcist, heck I have a line from it in my mini-bio, and some of my favorite scenes are the exchanges between "the demon" and Karras. Unfortunately the exchanges are quite brief. If there was more dialog between the two it would have likely been my number one.
In my opinion The Thing is a classic, but in terms of scariest I'd have to go with Paranormal Activity because it takes place in a bedroom. When I'm trying to sleep in my bedroom I start thinking about that movie and how much it scared me. I don't believe in ghosts or demons but that movie still has scared me more than any other horror film out there.
This is easily one of the weirdest film I think I've ever seen. Isabelle Adjani 's subway abortion nearly gave me nightmares. @rudeboy217 said:

Not exactly a real horror film but House is so fantastic and has so much heart. "
That film is so cool!
If I had to choose just one, I'd probrably pick Suspiria , but mainly only from an aesthetic standpoint. Argento really knew how to film lavish murder set pieces.
Great cast of characters, really interesting plot with a well delivered message and some pretty awesome special effects for the time. It is really hard for me to pick just one though, I am a huge horror movie guy.
" I don't watch horror movies. But I thought Signs was really scary. "
Signs was really good, that birthday scene freaked out 12yr old me, even though at the time I tried to play it cool with my friends.
I'd have to say The Shining is the best horror movie ever. They played it in one of the nearby theaters, and it was absolutely incredible to see it on the big screen with theater sound. Stanley Kubrick is the fucking man.
