    Goro, fer sure. He had 4 arms, and he didn't growl "You will die!" every time you hit continue to retry.

    Goro was the most fun.
    Motaro was the most irritating.
    Shao Khan was a cheap ass.
    Moloch from MK:A was also cheap.

    As much as I love Goro, Kintaro was more memorable to me because you couldn't just repeatedly cheese him to death with jump kicks.   ...Well, not completely, anyways.

    I really can't say that I particularly like any MK boss. They're generally just cheap and overpowered. While Goro wasn't all that bad in the original MK, he was a complete bastard in Armageddon.
