Will a player's card disappear from my collection when their career games reaches 0? I'm trying to collect all the players of my favorite NHL team and I'd like you use them too but don't wanna risk losing the card from my collection.

No they won't disappear. It'll just say their career is 0 and you can't play them. I'm not positive, but I'm pretty sure players whose career expired still go towards the rewards you get for completing team sets

last year, you didn't lose the card. you could, however, discard it permanently to get some pucks in return. a high-rated player could get you a few hundred pucks. well worth it, imo.

i don't know for sure if this has changed, but i'd be very surprised if it's not the same.

This year you get puck bonuses for collecting all players, jerseys, and logos from a team so there's some incentive for not discarding someone.
