Here's the key difference: Origins' main story was more tightly edited, and the optional content was a lot more optional in terms of leveling and progress. Origins definitely still had its share of bloat, but a lot of that stuff was very skippable and did not feel as ingrained in the overall progression. I was also just a lot more invested in Bayek's story and the small stories around the main quest than I ever was with Odyssey's content. There are decent missions for sure, but they're fewer and further between.
