As to why he took Viserion down instead of Drogon, consider how after they realized he can fuck them up they managed to avoid the second spear. It's more pragmatic to use your surprise attack on a flying dragon, and then use your second--when the enemy is then wise to your ability--on the grounded (and therefore more vulnerable) dragon. Either way he's gonna get at least one dragon with that surprise attack.
That assumes that Drogon learned to dodge the spear, rather than Dany as the rider instructing Drogon to dodge. Either way, it's not like he wasn't taking his sweet time getting that second spear. Following your explanation whichever second target would've ample time to leave once the first dragon got hit. And your first point only makes the second more damning. If he had the futuresight why not target the individual in control of the dragons first. He would be potentially left with two leaderless dragons rampaging about for him to turn, instead of them fleeing away.
Well I have a theory about that, Since we know that Viserion is the dragon that died back then, it could be linked to the fact that John as a dragon destined to him (to ride) and that one has to be Rhaegal, since his name is after his father (Rhaegar Targaryen). So if John gets to ride one to battle, while Danny rides Drogon, they had to kill and give a dragon to the enemy.
