I think it's easy to miss that even though the amount of videos are low per week, you're still getting hours and hours of content. An often 3 hour bombcast, 2 hour (sometimes over, sometimes less) unprofessional fridays, and an hour and a half TNT. They're the only three things you're ensured to get every week barring gaming events such as PAX, E3 or something like GDC. So that's 6 up to 7 hours of content every week. This is barring Quick Looks (which range from 15 minutes to over an hour of content per video), mailbags, I Love Mondays, other sudden premium content, and special features such as the GDC talks and panel footage.
If you contrast that with YouTube personalities such as Yogscast or, heavens forbid, PewDiePie who put out videos daily ranging from one to two videos per day on their ranging from 10 minutes to 20 minutes per video, GiantBomb, which is also personality based content as the two examples I gave, is still putting out an above average amount of content per week even at its minimum. Sure, it's their job, and they could be making more, but it will not be as relevant or on time as it is right now. Videos take a long ass time to render and the quick turnaround times for the archives of TNT and Unprofessional Fridays is probably taking up a shit load of their processing time. If you look at something like a Yogscast, GameGrumps or PewDiePie, their content is heavily backdated by about a week or so ago, which for journalism, GiantBomb's specialty, is unacceptable.
So, I don't personally have a problem. They still put out hours and hours of content, premium or not.
