My favorite was Gehrman. Not only does he look awesome, but it was a really fun boss fight. Even though I killed him first try, it was challenging and there were some scary moments and a decently long fight. It all made for a very rewarding feeling after killing him.
Runner ups would be Father Gascoigne and Martyr Logarious. Both really cool looking bosses and I loved the atmosphere of both fights, even though Gascoigne was rather frustrating with the wolf form.
