These are the "good" Star Wars games. This list is a work in progress.

It's the Chex Quest of Star Wars games in that it's better than it should be and it's also a lot like that game Doom.
Maybe the best Star Wars game? It has FMV. It has all the Star Wars sound effects that make you think of the movies. You get a lightsaber. You fight the bad jedis/siths. Some amazing level design. You play through a shipyard level to get to a spaceship, then you play through the spaceship level and the spaceship crashes and you play through the level again but this time it's the crashed ship. Real sense of scale and progression as you make your way through the sprawling levels.
Sebulba!!!!!! It's a game built around one of the two good scenes from The Phantom Menace. It's F-Zero but Star Wars.
Darth Vader killed all the jedi but not really. People say it's like Dark Souls but what isn't these days.
I may have this confused with one of the other Star Wars strategy games from this era, but I remember it being the RTS game you want in the Star Wars setting.
Remember when Raven software made games that weren't called Call of Duty? You will probably have easier time navigating the levels in this one than the first two games.
Squad before the term got really annoying.
You will scream at the television/computer screen way less in this one than in the first one. The dark side "choices" in the first game are extremely silly caricatures of what an evil person might do. Less scary evil or menacing evil and more petty and banal evil. The Sith Lords adds some much-needed nuance and grey area to the Star Wars Light Side/Dark side dichotomy, even if the game sometimes sounds like a shitty politician trying to tell you why helping poor starving people is bad actually.
Shadows of the Empire was a multimedia sensation. There was the novel, the comic, the game . . . probably an audiobook or audio dramatization . . . I think they put Dash Rendar's ship in A New Hope Special Edition. A lot of the game's problems stem from it being an N64 game. Incredible draw distance. I mean it's incredible that you can play and finish the game when the draw distance is like 3 feet in front of Dash Rendar, the main character in Shadows of the Empire. He's like Han Solo. Actually, he is Han Solo, really. They definitely put his ship, "The Outrider," in those special edition movies, so there's a reason to watch those versions, other than the fact that no other versions exist now. At least not officially.
If you had just read one of those Star Wars: X-Wing expanded universe novels, this game was pretty good. It still might be, though later games in the Rogue Squadron series surpass it in recreating all the cinematic space battles everybody remembers from the movies.
