I would also like to point out the reason I even bothered to comment on this post in the manner I did was a huge part due to the fact that the first comment made on this thread was "women are bitches". I love how that was overlooked by just about everyone in favor of comments that I and others made about how lame it was for the guy to WASTE his money on that ridiculous suit.
Haven't picked a side yet, but Stormcloaks will probably be my choice. Ulfric seems honorable and they're fighting for freedom. Just hope his general doesn't get too much of a say in things. The empire seems over-extended and oppressive.

Hehehe, quite funny. I thought for sure I'd be the only person crazy enough to restart the game for character build reasons. Anyway, I did about 5 hours into the game. First went magic, then realized there's a lot of synergy goodness to be found in a more melee oriented build. I'm quite happy with restarting, the new character suits my preferred combat style much better.
I liked how Morrowind did it. If you killed someone who was necessary to complete the main quest, a message popped up saying "yo, this dude is important. You might want to load a save or something".
I preferred this as well. Though if I think about it, there's many more "vital" npc in Skyrim for one quest or another, then there were in Morrowind.
As long as my quest npcs don't randomly get killed by dragons, I don't mind the occasional immortal npc.
It's mainly a damage recieved/dealt slider as far as I can tell. No rewards or anything.
If the game's becoming a bit too easy or hard you can adjust it. At around level 30-40 I found bumping it up to expert keeps things interesting balance-wise :)
