Seriously, between Uncharted 3, Spec Ops: The Line, and Journey, sand is gonna be huge next year. HUGE I TELL YOU!
The only question is, who will have the best sand animation?
Sand
Sand is a fine, granular material composed mainly of rock and mineral, primarily silica. Sand is the primary environment of many games with settings that include deserts, beaches, and the ocean floor, among many others.
2011 will be the year of SAND
We still haven't exactly nailed foliage or water yet but I think we've done a good enough job on those. Sand is a bit new though so it'll be interesting to see how multiple games will deal with the concept.

Not only will we see their triumphant resurgence, but we will also see them taken to a level we could never have imagined.
its definitely a showdown between Spec Ops and Uncharted 3.
Hopefully Uncharted 3 combines their efforsts though. I want sand, with puddles of water, and then it starts to snow.
Seems like sand will be a big deal next year, but out of the titles announced so far only Spec Ops seems interesting. To me, anyhow.
I have no opinion on what game will have the best sand, but I have been trolling my friend talking about sand for months and he thinks it's a special meaning for something. I'll send him a text on a friday night and be like "Hey man, lot of sand goin on down here" and he is clueless. He'll then ask what sand means and I tell him "You will find out yourself, one day". He is completely oblivious and it's great.
