A while ago, I put 2000 points on my VC account in the expectation of Castlevania Rebirth was coming on within the immediate future.  However, it is being released in the 4th quarter which is not a definitive choice.  That being said, I was looking at some virtual console games I would interested in picking up.  Keep in mind this is a North American Wii.   Try to break down the list to a smaller list of 10 to 20 games.

Wave Race 64 is pretty fun for a game to screw around in. Well it was back when the N64 was new and sandbox games hadn't come out yet. But I'm not so much of a fan of the racing aspect.
 
ActRaiser is a great game that offers differing styles of gameplay.
 
The Phantasy Star games were fine back in the day but have not aged well.
 
Heard good things about Shining Force series.
 
Gunstar Heroes is also a great sidescroller shooter.
 
River City Ransom is also a fun brawler that kinda has an open world aspect. Was awesome back in the day and hasn't aged horribly.   
 
The last two should be played in co-op.
 
The only three VC games I own are Secret of Mana, Super Metroid, and River City Ransom.

Donkey Kong Country is a game that you really should have played it is great in every aspect. Quite lengthy also if i remember correctly and stuffed with secrets.
 
Street Fighter 2 the world warriors is a nice game to have around if you have a second classic controller and a friend to play it with. 
 
 Super Mario RPG: Legend of the Seven Stars is a fantastic game, i fondly remember playing it. 
 
Pokemon Snap is also a game i would recommend, i had such a great time trying to find all the pokemon in that game.

Oh, also Castlevania 3 is the best one available for VC.

 Probably because you were a young lad at the time.  In fact, only late in the Genesis' life cycle did it obtain a bad reputation with people generally speaking.  Early on, the Genesis was looked at as the "cooler" console.  Most people who not admit to owning a Super Nintendo over the Genesis because Nintendo was considered more childish.  In addition, Both the SNES and Genesis were holding their own in the market. "

Unless you have a Wii Classic Controller, totally stay away from the DKC games. They're virtually unplayable with how poorly the controls are mapped, and the controls can't be altered. I wouldn't borrow with Super Mario Bros: The Lost Levels. It's basically SMB turned into game torture. River City Ransom is a classic, though I'm not sure how well it's holding up these days.

As for recommendations, I suggest out of the list you have written, pick one at random. They are all awesome games, and if you willingly choose one, you will be sad for leaving the rest out.
