Hi--I just got to the fourth overkill mission in Brutal Legend, after the big beasts with metal spikes, which you get in the winter-like area. But I can't find any of the animals to hunt...problem is I don't remember what the animal was exactly either, since I got that mission yesterday then went to bed and forgot about it. The mission giver is playing with a horsehoe, and I remember him saying something about how they melt into the ground super fast after you kill them and slurping them up...or something =P.
 
Anyways, could someone help me out and explain where to find these animals?

You're looking for Reaper Steeds, they are the ghost like horses running around. Here's a map showing where they tend to show up:
