I'd say KOF. While I do like the art style of Blazblue and the Guilty Gear games the backgrounds and characters seem to blend together and make it difficult to tell whats actually going on. Maybe it'll be different when I'm actually playing it and have it on a nice screen but as it stands right now KOF just looks fantastic and has a nice history for being awesome.
I'm siding with BlazBlue, only because it's wildly different than both KOF and Street Fighter. I think the characters and art look way better in it, the effects in KOF with movie maker explosions look pretty bad. But that's just me.
I'll probably get both somewhere down the line here, but BlazBlue would be first.
I say BlazBlue. I like the art style and characters in it more than KOF and I like the different mechanics of the characters with one guy being able to steal life, one can freeze the opponent, one fights with a marionette in addition to himself, etc. etc. I'm pretty excited for it actually. I need another game to mix up the SF4 goodness.
I'm going with KOF. Although I've only ever played Fatal Fury games in the past, it just appeals more to me (both in look and gameplay).
I'm going to say BlazBlue again, just because I can. Cmon! Blue blob dude and samurai guy are totally awesome! I'm so stoked for this game and I don't know why.
Honestly BlazBlue, but my only justification is that I absolutely cannot get into a KOF game, i've tried and i've hated all of them, they just dont 'feel' right to me. But i'm a huge Guilty Gear fan and BlazBlue looks awesome.
You could always get Battle Fantasia, should be cheap by now, I only had access to a friends copy for a short while but had a lot of fun with it.
Edit: Price irrespective, i'd flat out advise you to avoid MK vs DC, Virtua Fighter 5 and DOA at all costs, especially if you're lookg for something to unwind with.
Failing that, theres some decent ones on XBLA, Garou just came out (I don't like it, but hey) Hd Remix is 33% off this week, and theres a couple others up there I think.
BlazBlue has much more style to it and it looks like it'll be the best fighter on the x360 and ps3 when it comes out.
King of Fighters imo is Street Fighter. Plays so similar except KoF is a tad faster generally. Those are about tied.
Blazblue looks like a fighter I would somewhat enjoy and it has that nice art-style I like in those fighters. KOF XII IMO judging from watching the first match doesn't look all that great and well if you want something different than SF in terms of gameplay, that will not be the right choice since it plays the same from what I see. I go with Blaze but go whatever you want to play more, its what I always do. :)
If you think KOF is too similar to SF then you've obviously not played KOF for any good length of time. BlazBlue looks dull as hell.
Id pick both up eventually if I were you thats what Im doin but since your lookin at only gettin one Id go with blazeblue
If I play one of the two, then I'm probably going with KoF12. The sole reason for that decision is that I'm more familiar with KoF12 than I am with BlazBlue...and I'm not a HUGE fan of Guilty Gear or Guilty Gear-esque games. Also, BlazBlue has far too much clutter on their screens compared to King of Fighters. Regardless, I don't like the background action in King of Fighters. It's quite distracting.
Most people on this site don't really have any past experiences (Or not much experiences with a lot of other fighters) with the KOF games, which is the reason why there probably choosing BlazeBule.
I say go with KOF XII.
I'm getting BlazBlue. I might get KoF12 later on down the line when it's like $20 or something, it most likely will be before the end of the year...
I'm going to get both. For you, I don't know, but I'd say go with KOFXII. Arc System Works' fighters are always very complex even when compared to others like Virtua Fighter. KOFXII seems to be taking it back to the KOF '95 and '96 kinda feel and that might work better for you than BlazBlue.

And as for Capcom VS SNK, of course it's similar to Street Fighter, the Capcom logo is on the title.

I think BlazBlue looks pretty lame tbh. Combat looks awkward and stiff to me also.
KOFXII on the other hand looks silky smooth, and generally just badass all-around. KOFXII all the way.
I should point out I have never played KOF or GG before so... take my opinion with a grain of salt I guess... but I've watched a ridiculous amount of videos for both games. KOFXII is definitely a day 1 buy for me just based on the videos. BlazBlue, not so much.

It's fine if you don't like Guilty Gear, not many people do it's a bit of an oddball. But i'd take it over an SNK fighter anyday.

So a few characters are different and Garou has a few extra mechanics, it's still the same thing, theres no more difference there than there is between different street fighter games, why they saw a reason to change the name of the series 3 times is beyond me. It's still all the same.

It's still all the same. "You mean Fatal Fury? It's still Fatal Fury, like Real Bout: Fatal Fury -Real Bout contain no story-line, and as for Garou, still Fatal Fury. Actually in the KOF XI booklet, the Garou characters were named the Fatal Fury: Mark of the Wolves Team.
And as you said, you are not that into the SNK fighters expect for Samurai Showdown, but you have to to into the SNK fighting games to understand the differences a lot more. And for about SmugDarkLoser, what he said about Garou and KOF, he honesty thought KOF and Garou were the same series.
Sounds like the SNK team don't even know what they are doing with their own characters...
You can talk about the 'differences' all you want, but really, they aren't very different at all, they all play the same bar a few interchangeable mechanics, if you like one KOF/Fatal Fury/etc game, you'll like the rest, if you don't, you wont like any of the others.
Of course the same applies to guilty gear and other fighters, but my point is that they are so similar you may as well throw them all in the same bucket like people do GG, SF, etc.
I think the reason why people are saying BlazeBule is because of the flashy presentation, I don't think it has nothing to do with better gameplay.
While I don't think anyone is saying KOF and SF are the same game, BlazBlue is about as far in the opposite direction of Street Fighter that you could possibly go.
The gameplay looks wild, and I've been reading up on the gameplay systems in BlazBlue and they seem really interesting. The Barrier Blocks/Bursts, Distortion Drive, Rapid Cancels, and Haku-men in particular, since he has the Magatama to manage as well. The big ass juggle combos really remind me of Marvel, but in the best way possible (not in that broken way). There's 12 characters and they all seem to catch my eye and play wildly different.
Why do I have to pick three characters in KOF? I hate that whole system. The effects of speical moves look awful, like someone photoshopped an explosion image over someones leg.
Yeah i've always been kinda put off by that, I never understood why things had to explode to be cool, it's distracting quite honestly.
