I haven't played a few of these but SOTN was amazing so I'll pick that
Castlevania {choose one}
Had to vote for SOTN. It was such a revelation back in the day. Hell, I even imported the US version for the PS1
Castlevania I and III are childhood classics (I never understood Simon's Quest) and Super Castlevania IV was an amazing showcase of what was to come on the SNES (Though it scared the hell outta me as a kid, I only played it during the day)
Aria Of Sorrow on the GBA is also a fantastic game, one of my faves on the GBA. I really should play some more of the GBA/DS ones if they're close to those in quality.
Not close to these in quality, but I quite enjoyed Lords of Shadow.
I've always wanted to give Dracula X and Rondo Of Blood a twirl as well due to the sheer mythical praise around them back in the day.
I'm torn between Symphony of the Night and Dawn of Sorrow. I'll choose the latter, just for having played it many more times than SotN. But they are equally good, if you ask me. Never liked the pre-Metroidvania games, though.
You have a little mistake: Akumajo Dracula is the name of the Castlevania series in Japan, I think the game you meant to list is Akumajo Dracula X, which in turn is the same game as Castlevania: Rondo of Blood; the full original title being Akumajo Dracula X: Rondo of Blood.
As for my pick: Rondo of Blood.
I loved SOTN but I voted for LoS because it was a tremendous comeback in 3D for the series.

It's much more of a Castlevania game than that Anime-crap on DS and Wii. All that stuff is WAY more detached from the original Castlevanias than LoS, which is actually a back to the roots thing in many ways.

Of course there would. The DS Castlevanias, while still being good games, are just poor copies of SotN and had stupid anime characters and stories added to them that were nothing like Castlevania.
You obviously belong to that group of people who think Castlevanias were always Metroidvania-style games which is just not true. It was a linear Action-game with a very European style and LoS goes back to that.
