I sunk many quarters into Zombie Raid at my local Aladdin's Castle. Also can't forget Lethal Enforcers, the source of the "Reload! Reload!" sound bite that gets used every time I'm watching someone play a game and they run low on ammo.

Metal Slug.

Oh man, I just remembered the Alien Vs. Predator and Dungeons and Dragons arcade games. Konami made the best beat-em-ups.

Probably one of the Time Crisis games. I was never big on the whole fighting game scene.

Galaga, even though I was bad at it.

Street Fighter III 3rd strike. Me and my friends would play it for hours a day.

Either TMNT or the that Simpsons beat \em up game.

X-Men or that Simpsons Game.  
 
Whenever I see either one of them, I have to play it.

initially said MvC 2 but immediately after posting I remembered Gauntlet.

I like those games with the plastic guns you aim at a screen with a partner. Good times..

I'm going to go with Area 51, followed by Mortal Kombat II.

Final Fight followed by Raiden. 

Capcom's Dungeons and Dragons: Shadow over Mystara.
 
Best beat-em-up ever to be produced by any company, including Capcom. 
 
If you never played it and you enjoy beat-em-ups, I feel sorry for ya.

Did I have to have played the arcade version for it to count? If so, Time Crisis I guess. If not, Tekken 3.
