    I've done 3, and they were all really easy; I didn't even get shot at.  Will they ever get harder?

    If anything... they just get longer... there are a few where you have to kill quite a few bad guys... none of them are particularly tough.
    Regardless, you should go in with full armor, health and ammo to be safe... of course you get armor with every new Assassin mission so that should be a given that you have full armor.

    Some of em run, some of em ambush you as a group, some of em run away for long periods of times leading you on huge goose chases, etc.

    I can't say that the difficulty steadily goes up. I can however say that not all of the missions are at all similar.
