For my brother and I, it's definitely Mario Kart. 3-hour flight went right by. Just set up our own long cup with randomly selected tracks and bang.

For my girlfriend and I, it'd probably be Overcooked, but that'd be way more stressful and you get tired after a while so went with Kart.

Mario Kart, Overcooked, and Snipperclips are probably the best 2 players game on that list. Thimbleweed Park might be fun just solving the puzzles together. I know they support other control schemes, but anything that encourages waggling like Mario or Arms is probably best left off any form of public transit.

Mario Kart is probably the best answer. I really admire Overcooked and Lovers in a Dangerous Spacetime, but I have no idea how great it is to play those games portably and with more than one person with sharing the screen.
