Leon (slicecycle-guy):
Go to the maintenance room to the left of Slot Ranch Casino on the Silver Strip. There's a lead pipe and some rocket fireworks in there, which you can combine for a rocket launcher. Now, go to the stairs right before you enter Fortune Park. It's the first set of stairs you see when walking towards the place he is driving around in when walking from the maintenance room. Between the two sets of stairs there's a small green area with some trees and a sign with lights on it. Just stand on top of the sign (second "step"), the zombies shouldn't be able to get you here, and fire off some rockets when he comes around. He stops between the rocks and the Royal Flush and between the rocks and Atlantica (both very close to you). When you're out of rockets you can fight mano-a-mano or go through a loading screen to make the items in the maintenance room respawn.
Slappy:
I didn't really have a "tactic" here. I just jump kicked him and whacked him while he was down. You can also get a couple of bags of marbles in the children's store right next to the escalator if you want, but I found it easier to just stay right in front of him all the time. He shoots flames to the sides, so they shouldn't hit you if you're right in front of him. When he's getting up, he'll do this spin maneuver, so don't get hit by that. Also, you're invincible when dodge-rolling, so use it if you have it.

Helicopter:
This is pretty easy if you have the dodge-roll. Just throw a thing at the heli-blades, like the pylon or the lights right behind you. Dodge the crane first coming from the left side, then dodge it when it comes back from the right side. After this, the light on the crane-device will glow green, so press the button and repeat the process. The heli won't even have time to shoot at you if you get a rhythm going. Also, there should be a propane-tank in the area before you go to the chopper. Grab it with you to get a "head start".
The guy on the platform on the roof easy mode:

You will need a sledge hammer or a Defiler (sledgehammer+fireaxe). I suppose other weapons work as well, like the Knife+Boxing gloves combo for instance, but I used the Defiler. Bring some Pain Killers or Orange Juice, though there is food laying around if you need it, but it can be handy to have good food ready since his blows can be devastating (especially if you fall all the way down through the floor), and the bombs blow away the food that's laying around. Just jump up to the platform where he is standing and use the front kick or drop kick when he is pausing. He pauses for a bit after he has finished a combo (which you obviously need to dodge, either by rolling or jumping/running away). You can also kick him when he's doing a charge-maneuver, but this can be risky. So yeah, basically just kick him so he bends over, then whack him with your weapon. You can get two hits in with the Defiler, two to three with the sledgehammer. Just repeat until he's dead. If you successfully dodge his combos, you shouldn't take any damage and be finished in 2-3 minutes max.
Just some general tips for that other boss guy:

Before you enter the arena: make a pain-killer (beer+beer). Ingredients and the blender can be found just opposite of the restaurant (Davey's) on Platinum Strip. Chug the drink right before you click on the door, the effects (half damage/1minute) will still be active when the fight starts.
There is one Orange Juice in the corner right behind you from where you start, as well as another Orange Juice in one of the cardboard boxes, plus a Crowbar in another box. There's also a lead pipe on the scaffolding, but the crowbar's better. This fight is significantly easier if you have the dodge-roll ability, since you can just roll away whenever he's charging or getting ready to whack you. Depending on how many health-bars you have, you can just stay away from him most of the time and let him do his charge thing on you, half the time you wont even lose any health when he's pounding on you during the quick time event. After you're done with the QTE, he pauses for a bit. Whack him two times and get away. This probably won't work on it's own though, so you might want to whack him once or twice when he stops after running around some.
