I hope everyone tells Dan & Paul that yeast = fungus and nothing else.
Paul was right about pasteurization. You heat the product to decrease the amount of bacteria. It brings the product to a safe level ,without changing the taste too much.
Sterilization is heating it at a higher temperature with the aim to get rid of all micro-organisms. This alters the chemical structure of the product and changes the taste of the product. But it makes it viable to preserve food for a longer time.
Um, the beauty is them not knowing dumb science stuff like this. If it were two rocket scientists explaining everything, I'd be BORED TO DEATH.
