The reason sunday is considered the last day in the week is because of the old testament, wich states that God created the world in 6 days, and rested on the 7nth. That is the reason we have 7 day weeks, and thats the reason sunday is the last day of the week. So its basically just an old religious habit that we've carried on doing.
Technically Saturday is the 7th day of the week, but most Christians adapted to the Sabbath on Sunday, as it's believed that's the day Christ rose from the dead, and thus became the most holy day.
That's the reason calendars roll over to the next row on Sunday.
Jews and a few Christian denominations still have their Sabbath on Saturday, one of my friends teaches at a Jewish boarding school and classes are on Sunday there because they do the Sabbath on Saturday.
