Little Big Adventure 1 & 2/Twinsen's Odyssey got some nice tunes. The games were quite popular in Europe, but I don't hear much talk about them elsewhere.

Red Dead Redemption 2, Fallout and The Elder Scrolls series. I also love exploring smaller, more interior worlds, such as Bioshock, Prey and the Resident Evil series.
