It's probably supposed to mean "grey" being a Spanish game, which makes a lot more sense if this is what you thought when you first heard the name. But if you saw "Gris" and immediately thought "pig" that's something entirely odd.

Data East doesn't exist anymore (dissolved as of 2003). G-Mode (the developers of this game) bought the rights to Data East's IPs, as briefly discussed in Giant Bomb's Quick Look of Data East Arcade Classics.
Thanks. Then this is a creative move on their part to recycle old titles into something more interesting than just another emulator with bonus art. They are on to something here.
I'd love to hear the story on development of this game. I wonder how Data East was involved in giving the rights out to completely mash up their games and the collaboration between the developers.
