It's so not true that you can't test the performance of the site without actually launching it.

I would never launch a website like this without running extensive load tests on the actual production hardware. You need to get clear numbers about what sort of traffic you can support before you launch. Giant Bomb is lucky that it came together after the first couple days, but there should be no luck involved in software development.
