I would love to see Austin play Shenmue 1 on Dreamcast, with Vinny and Alex heckling. You could trust Austin to play thoughtfully, but you could trust Alex and Vinny to heckling from the seats like Statler and Waldorf.

I want my premium dollars to go towards them finishing Life is Strange

How about Prison Architect. Patrick did an unfinished ages ago and the full 1.0 version has just been released.
