Dark Valefor in Final Fantasy X. Yes, for most people, that's like an insanely difficult boss, but I just summoned Yojimbo and he cast Zanmato. Whole fight took 30 seconds!
Zelda Phantom Hourglass' two final bosses were disappointingly easy, given how spectacular they actually were. edit: Borderlands' final boss. Stand there and shoot a spikey vagina. Great.
Well, there are more difficult spiked vaginas to help balance things out.

And Fable II is the correct answer. There may be other correct answers, but no one can disagree that Fable II guy was easy.
Gears of War 2, and by extension The Thing, because they're basically the same final boss.
I dunno, I seriously thought the Gears of War 2 final boss was a joke. I didn't know if he was damaging me or I was damaging him, but all I did was blindly fire for about a minute and then the game ended.
At least in The Thing, you had to shoot the explosive barrels placed strategically so that they would spew fire in the exact direction of Whitley. That was one extra step. Come to think of it... maybe the audacity of that makes it worse. No... just funnier.
