Yes, the intros and endings to an anime are pretty important. Or at least, it's an anime tradition.

I don't watch a ton of anime but my favourite opening would be from Evangelion, someone already posted it, and my favourite ending would be FullMetal Alchemist Brotherhood's 4th ending:

Ha, I've watched the 9 episodes of Penguindrum in the last like three days. It's so fantastically bizarre, I love it. This scene in particular was when I saw just how awesome it was.
I usually skip through OP and EDs but there are a few that I like to watch/listen to. I am especially a fan of dancing.

I'm probably going to get a lot of hate for this, (or maybe not since anime snobs probably
aren't in the Giant Bomb community) but I love the first ending to Durarara:
Dragon Ball Z Buu saga opening (spanish version) and both Death Note´s openings are great , and the music for Rurouni Kenshin (Samurai X) openings/endings brings back some fond memories . But if I had to pick one probably will be Fullmetal Alchemist season 1 ending the way the track starts before the ending animation was kinda cool I always appreciate that bit of editing.
Haven´t watched anime since Death Note so I really remember very few of them.
