As far as what to watch next, There is always Dragonball evolution if you want to see the absolutely worst version of Dragonball ever. (Just be sure to follow it with it's honest trailer as a pallet cleanser) Also, Japan did a thing where most of the long running anime titles would release 1 hour movies once a year, so you can check them out if you want. Their all very non canon, but they've got a bigger animation budget so you can get better animated fights.

And more importantly there's the two movies Battle of Gods and Resurection F. DEFINITELY check these two movies out.

Welcome to the home stretch. As far as afterward, if you are going to subject yourself to Dragonball Evolution, may I suggest a few palate cleansers afterward? First of all, the Honest Trailer of that garbage pile is hilarious. And there's also 2 really fun death battles: Majin Buu vs Kirby, and Mr. Satan vs Dan Hibiki. Plus you'll definitely want to check out the movie Battle of Gods.

When Dragonball's creator Akira Toriyama finished the Manga he was so burned out he swore to never write anything Dragonball again. Then after seeing the live action movie, he anger at how badly it's makers had fucked up inspired him to pitch and script up the movie Battle of Gods. Plus checking out this movie and it's follow up Resurection F would be a good way for you to make a final decision on weather or not to look into Dragonball Super.

The reason there's been so many final moments in DragonBall is because Toriyama (Who wrote the Manga it's based on) tried to wrap up and end the manga several times, only to be talked into doing one more storyarc by his editors. The Buu Saga was the point where he said "No more after this!" Which is also why he had no reservations against getting a bit crazy here.

Anyways as far as GT goes, most of it can be summarized as "Good ideas executed poorly." For instance one arc features an alien superweapon created by a species destroyed by Saiyans activating and trying to kill the last surviving Saiyans, and another arc featured the Dragonballs breaking because they were used too frequently, and this creates 7 evil dragons to fight. Both are great ideas that could have been done so much better than GT did them.

Anyways if you're looking to what to do after you finish Kai, before anything else, I'd actually suggest you take a look at two episodes of DeathBattle. One is Maijin Buu vs Kirby, the other is Mr. Satan vs Dan Hibiki.
