While it's an important plot point, it wont ruin the experience, also it's very far from the end (maybe 1/4-1/3 into the game). The plot centers around dealing with loss in some way or another, so that particular point is only part of the setup.
FFX and FFX-2 will most likely be the most accessible. The DS remake of FF4 holds up very well. It was the first time I played it and it didn't feel like an old game. The FF5 and FF6 don't have the GBA/iOS enhancements, which, personally with how the iOS version looks, I consider that a good thing. FF 1 & 2 are a lot more difficult to play by modern standards without the nostalgia for having played it as a child. FF3 looks great, but does have a difficult learning curve. FF7, 8 and 9 are straight ports. I would reccomend the steam version of 7 over the PSN version if you can get it, because the mods look so good.
My guess- they developed a prototype to try to get Nintendo to back it as Eternal Darkness: Gates of Twilight, but Nintendo turned it down, so they took what they made and crowd funded it. This would explain why in the IGN demo, the UI is already WiiU ready (with button prompts and such)
