It depends on what you want from the game. I'm enjoying "easy" my first playthrough. However, I am only using four soldiers on missions. I like the balance of having only one soldier from each class. Plus, it's cheaper since I have to outfit less soldiers, and I don't need to spend as much time training reserve units.
I don't care for the resource management aspect of the game, so easy is more forgiving in that department, and I can focus on combat.
It stays dramatic because you're horribly outnumbered, and losing one soldier puts you at a serious disadvantage (especially on ironman).
I'm sure many people are gonna say this is weak, and I'm fine with that. Again, it depends on what you want from the game. I like a four member squad and "easy" provides a nice challenge on your first campaign.
