@tsang: It's a mix of things! Usually I'm looking for an ore vein. If I find it, I dig in the area around it to see if there are more pockets (especially when it comes to something like diamonds) or to see if it leads into another cavern. And sometimes I'm digging towards monster sounds as those generally lead me to bigger caverns to explore. And occasionally, I'm just following my gut and simply digging! But usually it's to look for caverns and big openings to mine, or more rare ore around a different rare ore spot, if that makes sense.
