What if we want to, you know, actually quote somebody? Also, I still don't fully understand how to get the # thing to work (how do I highlight a word and do it without replacing the word?).

You don't highlight. Just press the pound/hash key, and a box should pop up where you enter the name of something random. If it doesn't, I suppose it just doesn't work for you. Remember it's for Parchment v2.
