I used to be pretty poor so I couldn't afford new games or magazines before the internet got big and fast so I ripped demo cds from official playstation magazine and some other magazine at the store and played those a lot. Of course if shareware counts as a demo then Dooms and Duke Nukems and all kinds of crazy games back in those days. After those demo cd days I haven't really touched demos.
Demos you played multiple
Battlefield Bad Company, and I teamkilled the shit out of everyone...Yeah I was a dick a couple of years ago.
Batman Arkham asylum demo couldn't stop playing that demo, so much fun. More recently the demo for WWE all stars that game is ridiculously fun in multiplayer even though there is only two characters.
Strangely I remember playing a vib ribbon demo disc I got with a PS1 magazine a lot. I never played the full game and if I remember I was terrible at that game.
I played the demo version of Shadowrun A LOT--over 30 hours, I'd say. The game had absolutely solid gameplay, the only problem was the $60 price for a multiplayer-only game featuring only 9 maps and 3 game modes. But with a free demo was certainly a reasonable price. :D

Batman: Arkham Asylum is really the only one since the PS1 days when they use to give away demo disc as promotional items.
