Is there anything that if you see a game has, you want to buy it? Like a special feature such as ranked multiplayer or the like.
Personally I am a sucker for create a character and co-op multiplayer. Anyone else?
Things in games you can't resist
Exploration and Sidequests. Like when I heard about the social links in Persona 3, I just had to buy.
I just got Deadly Premonition because I want to see what the town is like.
Boobies...
No, but seriously, boobies... No, but seriously seriously, I like games that have scale. Uncharted and God of War have scale, and usually with games like those, you also have a good story that will take you on an insane adventure, where every set piece is bigger then the last.

Like I have completely neglected the story in Crackdown 2 in favour of gathering orbs. It's more satisfying than the weak story, anyway. But some collectibles really annoy me; I got sick of the ones in an old Mortal Kombat game (Armaggeddon, I think), where if you missed one you had to restart the story and then get to that level again.
For the thread, one thing I can't resist is good textures, high resolution, not every console is capable of it, i'm only talking about next gen high quality graphic consoles or platforms like pc. Well I also like fun factor, not every exclusive i've played is even remotely fun, just cause 2 for me was pure fun. Fun factor derives from gameplay and the gameplay mechanics. Not every game has it down right.
On topic, co-op and interesting story are usually selling points for me.
Stylish graphics, i.e. neon, retro, etc.

A swing mechanic, and sweet reload animations. Separate animations for reloading when empty or not is a plus as well.

Exploration and side-quests are big ones for me. I like collectibles to a certain extent, so this can be a love/hate kind of thing.
It's shallow (and perhaps creepy) of me, but satisfying blood effects have always appealed to me. If I'm gonna be shooting tons of dudes, it needs to feel satisfying. Initial splatter when the bullet hits the target and the splatter of blood on any surrounding surfaces.
Perfect Dark on the N64 initially turned me on to this, I think. That game did blood splatter pretty damn well for its time.
And then Counter Strike and Halo 1...
...and now, I'd say that Rainbow Six: Vegas 2, GTAIV, and Red Dead Redemption have all done the blood well.
Someday, when a studio invests money into creating realistic fluid physics so that blood splatter occurs realistically and differently every time, I'll probably cream my fucking pants.
Obviously the game has to be good, but aside from that all I really care about when considering a purchase is longevity. Whether it be single player focused(Mass Effect 2, Persona 3/4, etc.), or something with multi player I enjoy(Modern Warfare, Bad Company 2, etc.), it just needs to be something that I will get plenty of playtime out of.
Co-op with character progression.
Runny jumpy climby.
A real sense of design. Which is, I want every moment of every game to feel like it was being directed for me. Even games that have non-linearity, I prefer discrete paths that wind and intersect based on your input than a janky open-world where everything feels as if it happened randomly through a limited set of factors than by human vision and design.
Subtext. I like when a game refuses to explain everything that goes on by design rather than oversight. So many games have the obligatory third act setup where they explain every single mystery that has occurred so far.
