I like it when bands cover something and try to make it their own, while still holding true to the original artists' intentions. With that said:

Those are the two that came to mind first for me as well. I also agree with Captain Insano, I think Me First and the Gimme Gimmes are good.
Also Matthew Good's cover of Moon Over Marin is better than the original by the Dead Kennedys in my opinion. If you're a Dead Kennedys fan you'll probably hate this version because it is so radically different from the original.

Final Fantasy - Peach, Plum, Pear.
To avoid confusion Final Fantasy is the name of Owen Pallet's solo project. He is more commonly known as a member of The Arcade Fire. He openly admits the his stage name is based on the video game, and is a huge fan...so dont hate.
He covers Peach, Plum, Pear at his live shows. The song was written and performed by Joanna Newsom. She is a harpist, and singer, who is VERY polarizing. People either love her (myself) or hate her...many others.
This is the original, from Joanna Newsom's debut full length The Milk-Eyed Mender.
