I've been in the exact same position as you a few times. Here's my feelings on the toss up between EVE and WoW:
WoW - As soon as I hit level cap with my main I stopped playing. I found that it changed from a game where I could sit down for an hour or so and run a few quests, to a game where I needed to join a guild and dedicate certain times during the week to raid. I would love to do that (in a large part because I'd rather raid and chat with guildies at night than I would sit in front of a TV) but with my schedule there's just no way for me to be a reliable team member. Things are better these days with Battlegrounds and the Dungeon Finder, so I think WoW might lend itself to casual gaming more than it used to.
EVE - This is an amazing game. Such an awesome story and universe, such a steep learning curve that basically gets rid of all but the most dedicated. But there's one huge problem I've always had: as much as I want to love it, the idea of playing it is far more exciting than the reality.
As soon as I joined one of the large corporations a war broke out with another corp. This meant that for the next week I wasn't allowed to leave a dedicated station. I was literally paying real money to have a virtual space ship docked in a hanger. Now I'm sure once you get to know your corp, begin flying with groups and start fleet battles things would change in a huge way. I just never managed to wait that long.
If I was going to start playing either again (which I wouldn't mind doing in a very casual way), I'd probably choose EVE. I think the way you can level your character even when you don't have the time to play lends itself far better to a casual player. As well as that the concept of a sandbox universe largely shaped by the actions of the community is a really exciting idea.
