Already succesfully modded the graphics a little in mine, and I've never done so before in any games ever before, I found the whole process surprisingly easy and can't wait to see what a master at modding could do in the future.
Here are a few things I've done to mine.
I've increased how far I can see trees and how far away those trees keep their intricate details plus I've increase the trees depth of shadows, I've increased how far my personal radius to see lower foliage is too (grass and plants with collectible items in them etc) so that I can't see the edge of my moving grass radius over my horizon anywhere that I look (the original settings put in by Bethesda kind of broke the immersion for me personally, really wanted to improve it so much), the water shadows and reflections etc. and just generally spruced the beautiful graphical banzai tree that is Skyrim.
I'm sure there's more to be done, expecially since I've yet to get any graphical slow down on my AMD 6870 card.
I have noticed an understandable but very marginal increase in card temperature but I just turned the card fan up like 5% faster and now it's back to optimal so won't be a problem, especially since this game was designed generally for console use, so plenty of room for graphical improvement to manuever.
